The last couple of days I have been very busy cooking and getting projects ready for Easter. Today I made a recipe from My Sweet Remedy and if you get a chance to make them, it is a must!

Here is the Recipe:
Meringue Nests
- 4 egg whites
- 1 cup of white sugar
- 1 pinch of salt or cream of tarter
- Preheat oven to 200 degrees
- In an electric mixer (make sure your bowl is grease free), beat egg whites and salt until it starts to form soft peaks.
- Slowly add the sugar 1 tbsp at a time while beating at high spead.
- Beat until the egg whites are shiny and the peaks are firm.
- Add egg whites into a piping bag and use a decorating tip. I used the Wilton open star, just as they did.
- Then fill the circles with the meringue filling. Make sure to fill the whole circle. To complete the nest, pipe one more ring around the edge.
- Bake for 2 hours. Let cool completely.
Lemon Custard
- 1 1/3 cup white sugar
- 1/2 cup corn starch
- 1/2 tsp salt
- 2 2/3 cup water
- 4 egg yolks
- 4 tbsp unsalted butter
- 4 tsp lemon zest
- 1/2 lemon juiced
- In a double boiler put the following: sugar, corn starch, salt and water. Boil until thick and stirring continuously.
- Add egg yolks and continue stirring.
- Add butter, lemon zest and lemon juice.
- Remove from heat and let cool
- Cover with plastic wrap right on top of the custard and put in the fridge until ready to use.
